Formerly known as the colony of Celebes, this Indonesian island lies between Borneo and New Guinea in the Malay Archipelago. Toraja is in the mountainous area near the center of the island, while the better-known growing area of Kalossi is in the south. Similar to the Sumatra, in many characteristics, Sulawesi is the most acidic of the Inodnesians (but still a very low acidic coffee as with all Indonesians) and therefore tends to be brighter, crisper, cleaner and less wild tasting that a Sumatra. It has good creamy body with a hint of spiciness at the front end and floral notes on the finish.
